Coffee Cake Cookies with Streusel Topping and Vanilla Glaze


I saw a fancy version of these on Instagram and knew I wanted to give them a try. However, I wanted to create a cookie that had that cake like texture but maintained the crispy edges we love on delicious cookies. I also needed to step things up with a glaze because, who doesn't love a glaze? I may or may not have infused mine with orange extract but vanilla extract works perfectly fine. The star of the show is definitely the cinnamon brown sugar streusel topping. My friends and I ate every single crumb. Lol enjoy guys!

Ingredients:

For the cookies:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 + 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup sour cream

For the streusel topping:

  • 1/2 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 1/2 teaspoon ground cinnamon

  • 1/4 cup cold unsalted butter, cut into small pieces

For the vanilla glaze:

  • 1 cup powdered sugar

  • 2-3 tablespoons milk or cream

  • 1/2 teaspoon vanilla extract


 

Instructions:

1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, until everything is well combined and a soft dough forms.

4. Use a cookie scoop or spoon to portion out 2 1/2 tablespoon-sized portions of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

5. Use the back of a tablespoon measurement to make an indent in the center of each cookie dough portion, pressing down gently to create a well.

6. Fill each indent with a tablespoon of streusel topping, pressing it lightly into the dough.

7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

8. While the cookies are cooling, prepare the vanilla glaze by whisking together the powdered sugar, milk or cream, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

9. Once the cookies have cooled, drizzle the vanilla glaze over the top of each cookie using a spoon or piping bag.

10. Allow the glaze to set before serving. Enjoy these indulgent coffee cake cookies with your favorite hot beverage!
