Ingredients:

  • 3 ripe bananas, mashed

  • 2 large eggs, beaten

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 cup granulated sugar

  • 1 + 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cinnamon (optional)

  • 1/2 cup chopped nuts (walnuts or pecans), optional


 

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

2. Mash the Bananas:

In a mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

3. Combine Wet Ingredients:

Add the beaten eggs, melted butter, and vanilla extract to the mashed bananas. Mix well.

4. Add Sugar:

Stir in the granulated sugar until the mixture is well combined.

5. Combine Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon if using.

6. Combine Wet and Dry Mixtures:

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix; a few lumps are okay. If you're adding nuts, fold them in at this stage.
