Ingredients:

For the Muffins:

- 2 cups all-purpose flour

- 1 cup granulated sugar

- 1 to 1.5 teaspoons baking powder

- 1/2 teaspoon salt

- 1 teaspoon ground cinnamon

- 2 large eggs

- 1 cup whole milk (or your substitute, like half-and-half or oat milk)

- 1/2 cup vegetable oil

- 1 teaspoon vanilla extract


For the Cinnamon Sugar Streusel Topping:

- 1/2 cup all-purpose flour

- 1/4 cup granulated sugar

- 1/4 cup packed brown sugar

- 1 teaspoon ground cinnamon

- 1/4 cup unsalted butter, cold and cut into small cubes


Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and 1 teaspoon of ground cinnamon.

  3. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.

  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

  5. Spoon the batter into the muffin cups, filling each about 2/3 full.

  6. In a medium bowl, prepare the cinnamon sugar streusel topping by combining the flour, granulated sugar, brown sugar, and 1 teaspoon of ground cinnamon. Add the cold, cubed butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
