One of my best friends just graduated from her PhD program in occupational therapy, and she has a big week ahead of her. To celebrate her achievement and show some love, I decided to bake something special. She absolutely loves chocolate and cookies, and she challenged me a year ago to create a recipe with Oreos. The day has finally come, and I've crafted a delightful treat just for her: Chocolate Brownie Oreo Cookies. These cookies combine the rich, fudgy texture of brownies with the crunch of Oreo cookies, making them the perfect indulgence for any chocolate lover.

Ingredients:
1 cup (226g) unsalted butter
1 + 1/4 cups (250g) granulated sugar
3/4 cup (150g) brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 tablespoon brewed coffee (optional, but enhances chocolate flavor)
1 cup (125g) all-purpose flour
3/4 cup (75g) unsweetened cocoa powder
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon espresso powder
1 cup (175g) semi-sweet chocolate chips
1 cup dark chocolate chunks (or additional semi-sweet chocolate chips)
1 cup (about 12) Oreo cookies, roughly chopped
Instructions:
Brown the butter: In a saucepan, melt the butter over medium heat. Continue to cook, stirring constantly, until the butter begins to turn golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix the wet ingredients: In a large bowl, whisk together the browned butter, granulated sugar, and brown sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and brewed coffee.
Combine the dry ingredients: In a separate bowl, sift together the flour, cocoa powder, cornstarch, baking soda, salt, and espresso powder.
Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Fold in the goodies: Gently fold in the semi-sweet chocolate chips, dark chocolate chunks, and chopped Oreo cookies until evenly distributed throughout the dough.
Scoop the dough: Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft. The cookies will continue to cook on the baking sheet after being removed from the oven.
Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
