Brown Sugar & Sweet Orange Muffins


These Brown Sugar & Sweet Orange Streusel Muffins are a delightful treat bursting with tangy citrus flavor and a delightful crumbly topping. Ingredients

For the Streusel:

  • 1/3 cup all-purpose flour

  • 1/3 cup dark brown sugar

  • 1 Tbsp orange zest

  • 3 tbsp cold butter

For the Batter:

  • 2 cups/260g all-purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1 tsp Garam Masala

  • 1/4 tsp allspice

  • 1/4 tsp ginger powder

  • ½ cup melted butter (1 stick)

  • 1 cup granulated sugar

  • ½ cup vanilla yogurt

  • 2 eggs

  • Zest of 1/2 an orange

  • Juice of 1/2 an orange NOT ORANGE JUICE (about 2 Tbsp)

  • 1 tsp orange extract

  • 1/4 tsp vanilla extract

  • ¼ cup buttermilk

 

Instructions

  1. Preheat oven to 350F and line 12 muffin tins.

  2. For the streusel: In a medium bowl, add flour, sugar, and orange zest and stir to combine. Add cold butter. Using a fork, press and cut the butter into the flour mixture until it is crumbly and you have chickpea-size pieces. Set aside.

  3. For the batter: In a small bowl, mix flour, baking powder, Garam masala, all spice, ginger, and salt together using a fork. In a medium bowl or base of a stand mixer, add butter and sugar. Then whisk together. Whisk in the yogurt and then add eggs one by one while continuing to mix until combined well.

  4. Add orange zest, juice of orange, vanilla extract, and orange extract and mix well. Add in the flour mixture and buttermilk. Using a spatula, fold the batter until fully incorporated.

  5. Bake for about 25 minutes, until lightly golden brown.
