Ingredients

Crockpot

  • 1.5 - 2 pounds chuck roast

  • 1 yellow onion (halved)

  • 3 bay leaves

  • 32oz vegetable broth

Blender/Chili Sauce:

  • 5 chili de Arbol & 5 Guajillo chiles (stems removed)

  • 1 + 1/2 cups hot water

  • 1 Roma tomato

  • 1/2 tablespoon sea salt

  • 1 tsp ground black pepper

  • 1 Tbsp chili powder

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 2 tsp Mexican oregano

  • 1 tsp garlic powder

  • 2 tsp allspice

  • 1 tsp adobo

  • 3 to 4 cloves garlic

 
Directions

  1. Add dried chilies, hot water, spices, 1/2 onion, and tomato to a blender. Set to the side and allow the chilies to soften.

  2. Add chuck roast, remaining 1/2 onion, and bay leaves to crockpot. Cover with chicken broth.

  3. Blend dried chilies, hot water, spices, 1/2 onion, and tomato until smooth. Pour chili mixture into crockpot.

  4. Set crockpot to cook on LOW for 8 hours.

  5. Once the 8 hours is up, shred the meat with the back of a fork. The meat will be exceptionally tender.

  6. Separate shredded beef from the broth.
